Fresh mushroom preservation

Fresh shiitake mushrooms can be naturally stored for 5 to 7 days below 30 °C after picking. However, since fresh shiitake mushrooms reach the market from the production site, they need to go through 2 to 4 intermediate trades, thus causing damage to fresh shiitake mushrooms and further shortening the preservation period.

1. Short-term preservation method

Fresh mushrooms do not touch water, so as not to rot, put the umbrella upside down in the storage bag, tie a few vents, in the refrigerator, can be kept fresh for about a week. Fresh shiitake mushrooms can be stored for 15 days or so at about 5°C, but since they have been damaged in transit, the freshness will be shortened. 2. Long-term preservation method

If you want to keep it for a long time, you can directly put fresh mushrooms into the fresh-keeping bag, squeeze out the air and put it in the freezer for one night; on the next day, you will find that the mushrooms have already taken off the water, and only the surface is left with moisture and on the fresh-keeping bag. There are dense drops of water. At this time, take out the shiitake mushrooms, suck the moisture on the surface of the shiitake mushrooms with a piece of paper, put it in another clean preservation bag, and put it in the freezer again to be frozen. After this treatment, fresh mushrooms become freeze-dried mushrooms that can be cooked directly.

Precautions: If you find that mushrooms have more water (Mushroom umbrellas are darker in color), do not rush to store the mushrooms in the refrigerator. Spread the mushrooms on a cool floor and let them dry for a few hours. Wait until the color of the mushroom turns to gray. After drying, put it in the refrigerator and store it. Whenever it is found, the black mushroom should be discarded. The shiitake mushroom will have deteriorated. The smell will also change. If there is black mushroom, it must be discarded in time because it will affect the mixture. Other mushrooms.

The preservation of dried mushrooms

Dry mushroom preservation should pay attention to the following points:

1. Dry storage: After drying mushrooms, if not stored properly, it is easy to damp; especially in the rainy season when the temperature is high, humidity is more likely to cause mildew and insects. Therefore, the mushrooms must be stored dry, and it is best to store an appropriate amount of desiccant such as lump lime or dry charcoal in the storage container to prevent the dampness.

2. Sealed storage: Oxidation reaction is a necessary process for the quality change of Lentinus edodes. If the supply of oxygen is cut off, it can inhibit its oxidative degradation. Canned containers such as tin cans and ceramic jars can be used to store mushrooms. The containers should be lined with food bags. To open the container mouth as little as possible, the air in the liner bag should be discharged when the seal is closed, and the condition can be used to store oxygen and nitrogen in bags.

3. Low-temperature storage: The mushrooms must be stored in a low-temperature and ventilated place. If necessary, the container containing the mushrooms can be sealed and placed in a refrigerator for refrigerated or frozen storage.

4. Stored in darkness: The infrared rays in the light will increase the temperature of the mushrooms, and the ultraviolet rays will cause photochemical effects, thereby accelerating the deterioration of the mushrooms. Therefore, it is necessary to avoid storing shiitake mushrooms under strong light, and at the same time avoid packaging with light-transmitting materials.

5. Storage alone: ​​mushrooms have a strong adsorption, must be stored separately, that is, containers filled with mushrooms must not be mixed with other items, storage of mushrooms in the warehouse should not be mixed with other materials. In addition, don't use odorous volatile containers or odor-absorbed containers to hold mushrooms.

Therefore, dried shiitake mushrooms should be packed in a sealed container. It is best to put a suitable amount of desiccant such as lime or dry charcoal in the container to prevent moisture and store it in a ventilated, dry, cool place.
